Oh my gosh, these look amazing! I seriously love avocados and this week they are only $0.99 at Publix!
1/4 cup flour
1 tsp kosher salt
1/4 tsp kosher salt
2 large eggs, beaten
1 1/4 cups panko (Japanese bread crumbs)
2 firm-ripe medium avocados, pitted, peeled, and sliced into 1/2″ wedges
Grated parmesan (optional)
- Preheat oven to 200°. Heat 1 1/2″ oil in a medium saucepan until it registers 375° on a deep-fry thermometer.
- Mix flour with 1/2 tea. salt in a bowl. Put eggs and panko each in separate bowl.
- Sprinkle the avocado slices with the remaining 1/2 tea. salt. Dip each slice in the flour mixture, shaking off excess. Dip in egg, then panko to coat. Set in single layer on a plate.
- Fry a quarter of avocado slices at a time until deep golden, 30-60 seconds. Transfer slices to a plat lined with paper towels to obsorbe the excess oil. Keep warm in oven while cooking remaining avocados. Sprinkle with salt and a little grated parmesan. Serve warm or at room temperature.
