Weight Watchers Vegetable Soup Recipe – Only 1 Points Plus

Soup always fills me up!! This is a great lunch item – have it with a salad for a low-point meal.

Weight Watchers Vegetable Soup:
Makes 6 servings
Each serving is ONLY 1 Points Plus!

1/2 cup carrots, sliced
1/4 cup onions, diced
2 garlic cloves, minced
3 cups fat-free vegetable broth
1 cup green cabbage, diced
1 cup spinach, chopped
1 tbsp tomato paste
1/2 tsp dried basil
1/4 tsp dried oregano
1/4 tsp salt
1 cup zucchini, diced

Spray Saucepan with non-stick cooking spray.  Add carrots, onion, and garlic. Saute on LOW for 5 minutes.  Add in broth, spinach, cabbage, basil, tomato paste, salt, and oregano.  Bring ingredients to a boil. 
Reduce heat and cover.  Cook for 15 minutes. Then, add in zucchini and cook another 3-4 minutes.
