Bacon and Pancake Breakfast Casserole Recipe
I LOVE Bacon. Doesn’t everyone LOVE bacon? Winn Dixie is celebrating everyone’s favorite food with bacon sampling, bacon recipes, and bacon SALES! So much bacon!! All of this bacon talk inspired me to put together a bacon recipe. I’ll start by saying, when McDonald’s came out with a pancake sandwich (McGriddle I think it was called?) I loved it! This casserole reminds me of that pancake sandwich. It is SO GOOD!
First, I headed over to Winn Dixie to pick up some bacon and pancake mix. Everything else I had on hand. I was greeted with lots of bacon signs and sales.

Ingredients:
8 slices of cooked (crispy works best) bacon – crumbled
1 cup baking / pancake mix
1/4 cup maple syrup
3 TBSP sugar
2 Eggs
1 1/4 cups cheddar cheese (shredded)
1/4 cup milk
Directions:
Preheat oven to 350 degrees. Grease & flour a 9×13 inch baking pan.
In a large bowl, beat eggs, milk, baking mix, maple syrup, sugar, and 3/4 cup of cheese.
Pour mixture into baking pan
Bake for 15 minutes. Test with toothpick – if toothpick comes out clean, it’s done!
Sprinkle crumbled bacon over top of pancake. Sprinkle remaining cheese.
Return to oven approx 3 minutes (until cheese is melted)
