Easy Cauliflower Au Gratin

1 head cauliflower, broken into pieces
1 Tablespoon butter (I used LIGHT)
1/4 cup milk (Skim)
1 can Italian-style diced tomatoes drained
2 TBSP flour
3 TBSP seasoned bread crumbs
3 TBSP parmesan cheese
Salt & pepper to taste
Steam the cauliflower – approx 10 minutes. Cook together on stovetop: milk, butter, flour and tomatoes for about 5 minutes on medium, be sure to continue stirring. Add salt/pepper
In a baking dish, combine the steamed cauliflower with sauce. Sprinkle with parmesan cheese and breadcrumbs.
Bake in the oven at 375° F for about 15 minutes.
