4-5 Chicken Breasts
1 Package Taco mix packet (or you can spice however you’d like)
2 tablespoons Extra Virgin Olive Oil
1/4 cup Water
1 Can Diced Tomatoes (I usually use Rotel)
1 Cup Frozen Corn
2 tablespoons Apple Cider Vinegar
1 Can Black Beans rinsed & drained
Rice (I always use brown rice)
**I had to improvise today and use a few different seasonings since I didn’t have taco seasoning packets**
Place chicken in the crock pot. In a small bowl, mix your seasoning, oil, vinegar, and water.
Pour over chicken in the crock pot. Cook on low 4-5 hours.
Remove the chicken and shred or cube it if you prefer. Put chicken back into the crock pot and add in your drained corn, drained beans, tomatoes. Stir. Cook for an additional 45 on LOW. Serve over rice. I usually sprinkle fat-free cheese over ours.
