Did you know that Americans consume about 400 million pounds of cranberries a year? This goes into the more than 5 million gallons of jellied cranberry sauce consumed every holiday season. More than 94 percent of Thanksgiving dinners include cranberry sauce. However, when it comes to cranberries, Americans aren’t just “hitting the sauce” with these very merry berries, filled with vitamins C & E and flavorful fiber. There are many cranberry recipes out there to utilize this delicious fruit! From cakes, breads, and cookies, to main course dishes, cranberries are a great addition your meals.
Did you know that Cranberries contain Vitamin C and Fiber? They are also low in calories. I was able to purchase a large bag of fresh cranberries at my local BJ’s Store. Check out this awesome infographic provided by BJ’s:
I was inspired to create a delicious cranberry recipe of my own. After realizing I don’t think I have EVER cooked with cranberries before. There is a great poundcake recipe that I have utilized in the past with other fruits and flavors. So, we tested it out with cranberries. Yum!
Glazed Cranberry Pound Cake
Ingredients
2 sticks of real butter
1 1/2 cups sugar
8 eggs
1 1/2 cups all-purpose flour
1/8 tsp. salt
1 1/2 tsp. baking powder
1 1/2 cups cranberries
GLAZE ingredients:
1 1/2 cups confectioners sugar
2 1/2 tsp. milk
1/8tsp salt
1/4 tsp vanilla extract
1 tsp butter
Easy directions:
Preheat oven to 350°. Spray a loaf pan with cooking spray. Use a stand mixer on medium-high speed, cream together butter and sugar. Add eggs; slowly add dry ingredients. Fold in cranberries.
Pour batter into pan and bake 10 minutes. Cover with foil and reduce heat to 325°. Bake until set, about 1 hour and 10 minutes more. Cake is done when a toothpick inserted in the center comes out clean. Remove and place on cooling rack.
GLAZE directions:
Melt the butter and add to rest of GLAZE ingredients. Mix until creamy. Drizzle over finished cranberry pound cake. I like to add it when the pound cake is still warm so it melts in nicely.
