Every year I look forward to the Viva Italia sale at Publix. It’s a great time to stock up on all of the great ingredients needed to make our favorite Italian inspired dishes. We eat Italian meals 2-3 times per month, except during the Viva Italia sale, when we eat Italian and Italian inspired dishes a few times each week! Home cooked Italian meals are delicious. This week, I took one of my weekly recipes, meatloaf, and put an Italian spin on it. I added fresh parmesan cheese and replaced plain breadcrumbs with Progresso Italian breadcrumbs.
Added extra herbs and voila! It was a huge hit on our house last night.

ITALIAN PARMESAN MEATLOAF RECIPE
I will be the first to admit, it’s VERY hard to take a good picture of a meatloaf. But look at all that yummy sauce and cheese. Gotta love it!
*1lb ground beef or turkey
*1 cup Progresso Italian Breadcrumbs
*1 Cup Fresh Grated Parmesan Cheese (divided in half)
*1 Cup Hunt’s Pasta Sauce, divided in half (we used Garlic & Herb)
*2 egg whites
*1/2 cup chopped onions
*1 teaspoon garlic powder (I left this out because we used garlic pasta sauce)
*1/2 teaspoon dried basil
*1/2 teaspoon dried oregano
salt & pepper to taste
Preheat oven to 350°
Combine meat, 1/2 cup pasta sauce, 1/2 cup parmesan cheese, and the remaining ingredients in a large bowl. Coat a loaf pan with cooking spray. Shape beef mixture into loaf pan. Brush with remaining pasta sauce and sprinkle with remaining cheese. Bake at 350° for 1 hour and 10 minutes. Make sure meat is thoroughly cooked.
