Reese’s Peanut Butter Cup Cookies

- 1/2 c cup butter
- 1/2 cup peanut butter (we prefer the creamy)
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 egg
- 1/2 tsp vanilla
- 1 1/4 cup of flour
- 3/4 tsp baking soda
- 1/2 tsp salt
- Mini Reese Peanut Butter Cups (about 3 dozen)
Beat together the butter, peanut butter, sugar & brown sugar. Mix in the egg and vanilla. In a separate bowl, combine flour, baking soda and salt. Add the dry inredients to the wet ingredients. Mix well. Roll into 1 inch balls. Place into mini muffin pans. Bake at 375 degrees for 8 minutes- you will need to keep an eye on these, you want to pull them out before they are done, it may be 8 – 9 minutes. Just before they are done – they should still be a little soft in the middle. Remove from oven and place peanut butter cup into the middle of the cookie and press down. Place back in the over 1-2 minutes until the sides begin to golden. Let pan cool to remove.
*note* I didn’t have a mini-muffin pan, so I used a regular cupcake/muffin pan and they still turned out wonderful. Just a little large – but we didn’t mind at all.
