Zucchini & Squash Chicken Tacos
This was SO easy and SO tasty I had to share. I never thought of putting zucchini or squash in a taco-but today my husband made this for lunch and it was DELICIOUS – not to mention healthy (although I probably should have stopped at just 1 soft taco).
1 Can of diced tomatoes
1 large squash
1/2 lb boneless chicken cut into pieces (we used pre-cooked chicken breast chunks we had on hand)
packet of taco seasoning
shredded cheese (optional)
Slice the veggies & place in pot with water. Bring to a boil then lower the heat slightly – cook for approx 5min after the water boils. Drain. Add in can of diced tomatoes, chicken, taco seasoning. Bring it back to a boil, then simmer for 5 minutes, stirring occasionally.
Spoon into soft tacos. Add cheese.
